Goldmine
Mountain Cellars is an experiment in desert viticulture. Most believe
that quality wine grapes cannot be grown in the desert. The
extreme heat causes the grapes to ripen too quickly and acidity to
drop too far before harvest. It is my belief that through proper variety selection, careful viticultural practices, and fastidious winemaking processes, a quality wine can be made, even in the extreme heat of the Sonoran desert. Only time will tell if this is truly possible, but the early results have been promising. |
